Rhubarb

CAUTION:
THE RHUBARB LEAF CAN BE POISONOUS IN CERTAIN QUANTITIES AND SHOULD BE AVOIDED ALTOGETHER.
ONLY THE STALK OF THE RHUBARB IS EDIBLE!
Rhubarb is a plant that is used as a fruit, but is actually a vegetable--so it is already a powerful Changer food! The rhubarb’s red stalks grow out of the ground and are topped with big, fan-like leaves. The stalks are similar in texture to a celery stalk. However, the rhubarb stalk has a sour taste and is often cooked with some form of sweetener or combined and cooked with sweeter fruits such as strawberries. Rhubarb plants come back every year; some plants have continued to appear for more than 60 years! January 23rd is National Rhubarb Pie Day and June 9th is National Strawberry-Rhubarb Day!
